7 Quick Healthy Dinners for $6

This is the first in a series of capsule meal plans to help make dinner time a whole lot easier. When I first discovered minimalism I was most enticed by the capsule wardrobe concept. I am all about finding things to make my days easier. Then I got to thinking what if I took the same no-brainer concept and applied it to meal planning and voila, the capsule menu!
I’ve read that we basically eat the same ten meals but I get bored and so do my daughters. So I needed a system that allowed for a variety of meals but with a simple grocery list and quick preparation but with all of the health benefits. Each week I start by choosing a protein and a carb for the week. I then create a week’s worth of meals adding in veggies. I prefer to make the food prep as simple as possible, I use the Instant Pot to cook the chicken while the brown rice cooks in the rice cooker. Then each day the chicken is seasoned according to the dinner and everything is assembled. One of the things that I love about this is that most of these meals can be grab and go as we seem to have activities every single night.
Monday: Burritos w/Spanish rice and beans
Tuesday: Chicken salad sandwiches and cucumber salad
Wednesday: Caesar Salad
Thursday: Fajitas w/sautéed onions and peppers
Friday: Pulled Chicken BBQ Sandwiches and salad
Saturday: White Chicken Chili
Sunday: Chicken, Rice and Roasted Veggies
- Flat of chicken breast
- Brown rice
- White Beans
- Veggie of choice
- Corn tortillas
- Shredded Cheese
- Sour cream
- Green Chilis
- Whole Wheat Bread
From the pantry:
- BBQ sauce
- Caesar Dressing
